Vanilla Ricotta with Baked Berries

Ingredients

375g fresh mixed berries

1 tsp good quality balsamic vinegar

1 tbsp caster sugar

200g ricotta

2 tbsp thickened cream

2 tbsp icing sugar

1 tsp vanilla bean paste

Pinch cardamom

Method

Preheat the oven to 200°C. Mix the berries, balsamic and caster sugar in a tray and roast for 10 minutes or until they burst and blister. Cool.

Whisk together the ricotta, cream, cardamom and vanilla until smooth.

Portion ricotta cream onto plates and add blistered berries. Drizzle juices over the top.
